Changes in the chlorophyll carotenoid and lycopene contents of tomatoes in relation to temperature.

ABSTRACT

Tomatoes (cv. Sunny) were harvested at the mature-pink stage and kept at 0 and 18 deg C for 35 days. Analyses were carried out every 7 days. The average chlorophyll, lycopene and carotene contents at the beginning of storage were 2.00, 3.62 and 72.89 mg/kg, respectively, and at the end of storage at 0 deg were 1.44, 14.12 and 1.59 mg/kg, respectively. The chlorophyll content disappeared in the first week at 18 deg . The rates of decrease in chlorophyll and carotene and increase in lycopene during storage were slower at 0 deg compared with 18 deg . Weight loss, firmness, colour, DM, respiration, quality and appearance were better at the lower temperature.
