ABSTRACT
Fruits were stored under %CO2:%O2 regimes of 0:21 (control), 3:3, 5:5, 10:5 and 20:2 at 0 deg C and 90-95% RH for 40 days. Weight loss during storage was significant but there was no difference between treatments. The firmest fruits after storage were from the 10:5 regime and the least firm were from the control regime. Fruits from the 5:5 regime had the highest total sugar content after storage + 3 days at room temperature. Appearance and taste were best in fruits stored in the 5:5 and 3:3 regimes. Fruits from these regimes (5:5 and 3:3) had the best fruit quality over a 4-week storage period.
