ABSTRACT
The effects of an SO2 generator (UVAS) on the storability of Thompson Seedless berries was investigated. Berries were stored in 6-, 8- or 10-kg packs and wrapped in perforated (PPE) or unperforated (UPPE) bags containing a slow release SO2 generator. The berries were stored at 0 deg C and 90-95% RH. In the control, berries could only be stored for 2 months due to excessive decay but the SO2-treated berries could be stored for 105 days. The highest SO2 levels were found in the 6-kg packs but the concentration was within the maximum limits allowed (10 p.p.m.). Appearance and flavour did not differ greatly between treatments except for the control which suffered a marked loss in quality after 2 months. Berries wrapped in PPE had better flavour than UPPE. Weight loss was greatest in the control and lowest in the UPPE treatment. Overall, quality could be maintained in berries stored for 105 days using just one bag/pack of the SO2 generator for 6-, 8- or 10-kg packs wrapped in PPE.
