ABSTRACT
Iceberg lettuces (cv. Calona) were stored for 25 days at 0 deg C and 90-95% RH under %CO2:%O2 regimes of 0:21 (ambient), 0:5, 1:5, 3:3 and 5:5. Quality parameters (including weight loss, respiration, pH, acidity, overall appearance and taste, and protein, sugar, chlorophyll, ascorbic acid and nitrate contents) were measured on days 0, 15 and 25. Lettuce quality was better under all CA regimes compared with the control (0:21). Percentage weight loss and respiration rate were lowest in the 3:3 regime and this regime along with the 5:5 regime were considered the most suitable overall for storing lettuce.
