ABSTRACT
The following research approaches are described: visual or observational analysis, gas exchange, chemical evaluation using destructive analysis, other non-destructive chemical analysis, enzymology, pathway analysis using additives and/or inhibitors, the use of mutants in conjunction with other methods, molecular biology and molecular genetics. The contribution each has made to the understanding of fruit metabolism is assessed. Most research has been carried out on temperate fruits but reference is made to the value of these approaches for studying ripening and senescence in tropical fruits.
