Minimal processing of tropical fruits.

ABSTRACT

Minimal processing of tropical fruits in Thailand is described, with particular reference to methods applied to durians, jackfruits, mangosteens, pawpaws, pineapples, pummelos and coconuts. Problems associated with minimally processed products and possible solutions are outlined.
