Prediction and prevention of apple superficial scald.

ABSTRACT

Granny Smith apple fruits were harvested at different stages of maturity and stored under controlled atmosphere (3.0% O2 + 3.0% CO2), including ultra low oxygen (ULO, 1.5% O2 + 1.0% CO2), conditions for 7 months. Some of the fruits were heat-treated (37 deg C for 4 days) prior to storage. Superficial scald and conjugated triene hydroperoxide (CTH) levels were monitored during storage. In general, scald and CTH levels were lower in the more mature fruits. CTH levels were lower in ULO storage and were lower in heat-treated fruits than in non-heat-treated fruits.
