The influence of low oxygen concentration during storage on metabolical processes in apples.

ABSTRACT
Fruits of cultivars Idared, Golden Delicious, Jonathan and Starkrimson were harvested at optimum maturity and stored for 230 days at 0-1 deg or 3 deg C and in O2 concentrations of 0.5, 3.0 and 5.0%. CO2 concentration was held at 3% for all treatments. Very low O2 levels (0.5%) inhibited respiration, ethylene production and peroxidase activity but increased the antioxidant activity as measured by the optical density of the hexane extract of the epicarp. Storage at the higher temperature (3 deg ) increased respiration rate, ethylene production, peroxidase activity, tissue conductivity and advanced fruit maturation but these changes were small with 0.5% O2.
