ABSTRACT
Elstar apple fruits were picked early or at the optimal harvest time and stored at 1.5 deg C in 1% or 5% O2 and 0.5% CO2. Ethylene was removed or supplied at 100 micro l/litre during storage. Fruits from both harvesting times remained preclimacteric when stored in 1% O2 with no ethylene and retained considerable firmness, indicating a long storage potential. The addition of ethylene increased endogenous ethylene production, particularly in 5% O2. This led to decreased firmness and skin colour and increased respiration. The loss in fruit firmness during storage with ethylene amounted to 2.4 and 6.3% per month in 1 and 5% O2, respectively.
