Role of some natural substances in the post-harvest diseases of horticultural and fruit products.

ABSTRACT :

 

The effect of preexisting natural compounds on the nutritional and phytopathological quality of fruits and vegetables during cold storage is described, and the metabolism of these compounds in stored plant material affected by physiological and fungal disease is considered. During processing and storage, the reactivity of phenolic compounds, often coupled with the activity of polyphenoloxidase, is responsible for some phenomena affecting the colour, taste and nutritional value of the plant products. In addition, this reactivity can affect the resistance characteristics of fruits and vegetables against storage fungi. In the same way, glucosinolates can affect the nutritional and phytopathological quality of Cruciferae. The potential practical applications of these natural substances as fungicides are discussed.
