ABSTRACT :
Postharvest treatment of plum (Prunus salicina) fruits with GA3 at 200 mg/kg significantly delayed colour change and internal browning during storage at 3 deg C. GA3 also inhibited phenylalanine ammonia lyase activity, delayed the peak in polyphenol oxidase [catechol oxidase] activity, and resulted in reduced concentrations of phenolic compounds and anthocyanins. The roles of these enzymes and compounds in fruit colour changes during storage are discussed.
