Penetrometric properties of apple varieties in Hungary.

ABSTRACT :

 

Rheological properties (bioyield stress, rupture stress, the ratio of these stresses, and the work of deformation) were considered as variables in evaluating 6 apple cultivars (Gloster, Jonathan M41, Jonnee, Jonagold, Mutsu, Redspur). Analysis of variance was used to check the relations of quality. Results of calculations show that rupture stress can be used for evaluating the difference in quality according to apple cultivars. The stress ratio proved to be suitable for evaluating the effect of storage time and the work of deformation was suitable for evaluating the effect of picking time.
