Firmness tester for fruits and vegetables.

ABSTRACT :

 

A hand-held penetrometer was developed to measure the compressive stress at a preset constant deformation - the ratio of the compressive stress to the deformation providing an appropriate measure of the elasticity and the firmness of the fruit. The method is nondestructive if the compressive stress and the deformation are lower than the values of the inflection point of the stress-strain curve. The penetrometer consists of the following parts: handle; replaceable probe of 4, 6 or 8 mm diam.; frame to limit the penetration of the probe to the desired value; force transducer; interface containing an analogue-digital converter; microcomputer to control measurements, record readings, calculate and store results; data transfer link between microcomputer and PC. The equipment can be used to perform several measurements on a given fruit, calculate the coefficient of the elasticity, and store the statistical characteristics.
