Alleviation of chilling injury of citrus fruits by using sucrose fatty acid esters.

ABSTRACT :
Ponkan mandarins, kabosu fruits (Citrus sphaerocarpa), seminole tangelos, lemons, grapefruits and sweet oranges were dipped in 0.35% aqueous solutions or emulsions of sucrose fatty acid (C10,12,14,16,18) esters (SFA), and then stored at 1 deg C. SFA treatment reduced chilling injury in all fruits except sweet oranges. Treated fruits had a reduced weight loss and a higher respiration rate during storage. Sucrose myristate, palmitate and stearate having a hydrophilic-lipophilic balance of 16 were the most effective.
