Fatty acid profile changes in Marsh Seedless grapefruit in response to storage conditions.

ABSTRACT :
Marsh Seedless grapefruits were stored for up to 12 weeks at 4, 8 or 12 deg C and 90-95% RH. Significant changes in fatty acid composition occurred during storage with the proportion of linolenic and palmitoleic acids increasing while palmitic, stearic and oleic acids decreased. There were no changes in fatty acid composition during shelf-life after storage apart from a decrease in palmitic acid in fruits previously stored at 4 and 12 deg . There was a negative linear correlation between the amounts of palmitic and palmitoleic acids and between the amounts of oleic and linoleic acids.
