บทคัดย่อ

The importance of packaging and modified atmosphere in maintaining the quality of cultivated mushrooms (Agaricus bisporus L.) stored in chill chain.

ABSTRACT :

 

Mushrooms (Agaricus bisporus) were packed in pouches made of perforated polypropylene (PP) film (0.2, 3.0 or 6.0% perforated surface) or in pouches with a modified atmosphere (MA) and stored at 5 deg C for 7 days. After storage, quality was best with PP film perforated to 3% of its surface area (91% marketability). Transpiration loss and the microbial count were lowest in MA but flavour was impaired.
