Generation of controlled atmospheres by utilizing fruit respiration.

ABSTRACT :

 

Experiments were conducted to evaluate a system of fruit storage used in China where the natural respiration of fruits is harnessed to produce controlled atmosphere (CA) conditions. In 1989, Golden Delicious and Jonagold apple fruits were placed in storage at ambient temperature conditions. CO2 concentration reached 17.5% and O2 concentration reached 3.5% within a week of storing. In 1990, CO2 concentration reached 19% after 4 days and O2 concentration reached 2%. At that point the temperature was reduced and CO2 was removed over 1.5-2.0 weeks to achieve the final CA conditions (3% CO2 and 1-1.5% O2). The fruits were stored for up to 8 months. Fruit texture was not as good as in fruits stored immediately under optimal conditions but it was better than in fruits which had been cold-stored. The same applied to the decrease in acidity. Aroma was as good as in fruits in optimal CA storage. This method was not seen as competing with CA storage but rather as an intermediate solution for smaller enterp
