Characterization of lipids extracted from peach kernels.

ABSTRACT :

 

In an effort to find new plant sources of oil, the characteristics of lipids extracted from peach kernels were analysed. The kernels had 49.58% lipid content with a specific gravity at 20 deg C of 0.914, refractive index 1.4692, acid number 108.5, peroxide number 0.72, iodine number 104, saponification number 186, unsaponifiable matter 0.85%, colour 13 yellow to 2 red, and were free from hydrocyanic acid. Fractionation produced palmitic, arachidic, palmitoleic, oleic, linolenic, gadoleic and eicosatrienoic fatty acids. Six sterol fractions were identified as cholesterol, 5 delta -campesterol, beta -sitosterol, 5 delta -avenasterol, 7 delta -stigmasterol and 7 delta -avenasterol. The oil extracted was considered to be a semi-dry oil with many uses (including human consumption).
