Physiological changes of postharvest asparagus spear.

ABSTRACT :

 

Asparagus (cv. California 500) spears harvested from Fuyang County, Zhejiang Province, China, were precooled in water, cut and sorted (17-22 cm in length, 0.12-0.16 cm in diameter) and then placed vertically in water and stored at at 0-2, 10-12 or 20-22 deg C. In a second experiment, spears were stored either horizontally or vertically at 0-2 or 5-8 deg . The optimum storage temperature was 0-2 deg C; spears could be stored for 7 days at this temperature. With increasing storage temperature and duration, spear length, firmness and fibre content increased, but vitamin C, TSS, titratable acids and chlorophyll contents, and cellulase activity decreased, resulting in reduced sensory quality. When spears were stored in a horizontal position, the stem bent upwards, chlorophyll content decreased more rapidly and rutin [rutoside] content increased, compared with spears stored vertically.
