ABSTRACT :
Potato yield is especially sensitive to heat and drought, where even a short period of acute stress can cause substantial yield losses. This chapter reviews the effect of 4 environmental stress conditions on yield and quality and attempts to explain the effect in terms of physiological and molecular parameters. It also discusses the prospects for identification of genetic factors involved in stress tolerance. The environmental stress conditions considered are: heat stress and thermotolerance; water stress and drought resistance; cold stress, including frost tolerance and cold-induced sweetening during storage; and hypoxic stress and postharvest losses.
