Post-harvest potato tuber glycerolipid metabolism.

ABSTRACT :

 

This chapter focuses on tuber-specific aspects of membrane lipid metabolism, their physiological consequences and the prospects for transgenic improvement of the potato crop. The review is given under the following headings: potato tuber membranes and their glycerolipid compositions; postharvest alterations to glycerolipids and membrane function; long-term storage and membrane degradation; and transgenic routes to enhanced chilling tolerance.
