Economic evaluation of vegetable and fruit losses in the Sao Paulo retail market, 1991/92.

ABSTRACT :
A total of 70 sales outlets (30 supermarkets, 20 greengrocers and 20 street markets) were used in studies to evaluate the physical loss due to deterioration and its economic value for 42 fruit and vegetable products (17 fruit and 25 vegetables) in Sao Paulo, Brazil, in 1991/92. The results showed an average loss of 10% of the volume traded. There has been a significant reduction in losses in supermarkets (9.6%), a stabilization in greengrocers (14.6%) and a slight reduction in street markets (9.3%), when compared with results from 1973/74 (22%, 16% and 12%, respectively). The total loss value was estimated at $106.3 million, with tomatoes, oranges, apples, grapes, potatoes and pears having the highest share of this value. It is suggested that the reduction in supermarket losses could have been due to better supply and stock administration systems, as well as the use of cold counters. However, the losses in supermarkets were still brought down only to the level on street markets. Traditional smal
ler losses in street markets' products are due to the fact that market dealers give more attention to consumers' preferences, such as variety and quality, and to purchase and sale over a smaller time span. The lower fall in losses at greengrocers and street markets could have been due to continued use of the same marketing practices.
