Effects of Semperfresh(R) and Johnfresh(R) fruit coatings on poststorage quality of "Ankara" pears.

ABSTRACT :
After cold storage (0-1 deg C, 85-90% RH) for 5 months, pears were dipped for 5 s in either water, Johnfresh (based on carnauba wax + shellac, used without dilution) or solutions of Semperfresh (sucrose polyester, recommended concentration 0.8% w/v, actually used at 0.5, 1.0 and 1.5%), and stored for 15 days at 20 deg . Both coatings delayed ripening and extended storage life, Johnfresh being somewhat more effective than Semperfresh (which was much less effective at 0.5%). Compared with control pears, treated pears had better colour and firmness, and retained more ascorbic acid and titratable acidity, while soluble solids content was lower owing to less respiration and weight loss.
