Apple flavor.

ABSTRACT :

 

Apple fruit flavour (including taste and aroma) is reviewed. The subjects covered include the volatile compounds produced by apple fruits and juices (listed in a table); off-flavours; the biogenesis of flavour; factors affecting flavour (including preharvest factors - fruit maturity and ripening, internal factors such as fruit structure, cultivars, climate, fertilizers, irrigation, growth regulators; and postharvest factors - storage temperature, humidity, controlled atmosphere storage); the correlation between instrumental and sensory analyses of flavour; and future research needs.
