ABSTRACT :
Harvested sugarcane was stored for 6 days in the open (temperature varying from 11.0 to 31.5 deg C) with daily sampling for analysis and conversion to gur. Changes in cane weight, juice extraction (%) and quality parameters (juice pH, pol and purity; gur yield, colour and reducing sugars) for early, mid and late cultivars are tabulated and assessed. The rate of deterioration was usually slow at first then quicker after approx equal to 2 days, and greatest in the early-maturing cultivars.
