ABSTRACT :
Analysis of mandarin cv. Kinnow fruits showed that the naringin content was highest in the peel (0.422 mg/g), followed by the juice (0.230 mg/g) and seed (0.134 mg/g). The highest limonin content was found in the seed (9.50 mg/g), followed by the peel (4.69 mg/g) and juice (0.218 mg/g). Juice stored at 25 deg C developed full bitterness after 4 h compared with 7 h for juice stored at 12.5 deg .
