ABSTRACT :
Research on cracking of rice kernels during drying and its prevention is reported. RH changes in the storage environment were found to have a greater effect on cracking than temperature changes. The effect of physical properties and chemical composition of rice kernels on resistance to cracking is discussed. Damage to low moisture rice could be prevented or reduced by improving pre- and postharvest technology.
