Postharvest treatment of fruit in shells.

ABSTRACT :

 

Postharvest treatment of almonds, walnuts and hazelnuts is discussed. The major part of the Italian nut crop is used in industrial-scale confectionery production. Hazelnut harvesters provide a clean crop ready for delivery for postharvest treatment. The crop is weighed and sampled, shelled, and graded to remove impurities and nuts of unacceptable quality. The crop is then divided into first and second quality. Nuts needing further treatment are washed and passed through an automatic intermittent drier (alternate hot and cold air) until a moisture content of 6% is reached and are then stored separately from the first grade product. A final quality check is carried out after unloading from the silo. Roasting is carried out in traditional machines or by infrared heating and finally the nuts are ground, either coarsely or finely depending upon the end use. Treatment of almonds follows a similar pattern, with the additional requirement for removal of the inner husk before drying. The first quality pr

oduct is packed for shipment for use primarily in production of sugared almonds; the second quality goes for sweet and pastry production, whilst the poorest fraction is ground. Walnuts are treated with similar equipment to that used for almonds. They are commonly sold in the shell, which is chemically whitened and then polished. Further processing of walnuts is most often carried out in the food factory.
