ABSTRACT :
The control of temperature and RH during storage and the efficacy of biological control, heat treatment, postharvest calcium treatment, edible coatings and controlled and modified atmosphere storage in maintaining the quality of fresh fruits and vegetables are discussed. It is suggested that more research is needed to determine the stress related aspects associated with postharvest handling and transport and to understand better the mode of action of such treatments.
