Prediction of colour changes in criollo peaches (Prunus persica L. Batchs) during postharvest storage.

ABSTRACT :

 

A study was conducted to model the colour changes in criollo peaches at different maturity stages at room temperature and RH. The L*, a* and b* values were evaluated, from which the Hue value was calculated. A previously developed mathematical model and an exponential model with non-linear regression were used in the calculations. The mathematical model gave a good prediction of the Hue value in samples containing fruits at different maturity stages. The exponential model gave a good prediction in fruits at advanced maturity stages.
