ABSTRACT :
The quality of recently harvested strawberries and strawberries purchased from a commercial establishment were evaluated in relation to objective and subjective attributes of quality. Results obtained show significantly higher values of ascorbic acid content, total solids and firmness for the recently harvested strawberries, indicating the deleterious effect of postharvest handling on strawberries in this region. Results show a good correlation of sensory acidity with titratable acidity, sweetness is positively correlated with soluble solids, and sensory firmness is positively correlated with objective firmness. It is concluded that extreme care is needed during postharvest handling to minimize physical damage, cooling of the fruit is suggested to lower the detrimental effects of damage, and transport and marketing time should be kept to a minimum.
