ABSTRACT :
A brief summary of pistachio production in Greece is given. The main rootstock used is Pistacia terebinthus, and the main cultivar is Aegina. The composition of the nut is 55% fat, 23% protein and 14% carbohydrate. Trees are grown in widely differing climatic regions, and harvesting and postharvest treatments are briefly outlined. The main research topics are listed.
