ABSTRACT :
Cherimoya fruits (cultivars Concha Lisa and Bronceada) were harvested from 4-year-old trees at 14-day intervals from 24 Aug. to 16 Nov. The fruits were densely covered with trichomes, particularly in the distal zones. Trichome density gradually decreased during fruit maturation (i.e. with later harvesting date) and was negatively correlated with fruit weight, soluble solids content and pH, and positively correlated with acidity. Physiological maturity was determined as corresponding to trichome densities of 28.80 and 24.30/0.16 mm2 in the distal and equatorial zones, respectively, in cv. Concha Lisa, and 33.17 and 28.5/0.16 mm2, respectively, in cv. Bronceada.
