Microwave dielectric properties of 23 kinds of fresh fruits and vegetables were measured from 200 MHz to 20 GHz. Similar measurements were taken on peaches of 3 cultivars at 3 different stages of maturity. Significant variations in the dielectric constants and loss factors were noted over the frequency range. Proper combinations of the dielectric constants and loss factors of peach tissue at 200 MHz and 10 GHz provided maturity indices that were indicative of maturity stage. Further research is required to develop reliable maturity indices, but a potential basis was shown for rapid nondestructive sensing of maturity stage through differences in dielectric properties.
