Cooling rate measures, such as the half-cooling time, have been used to evaluate cooling systems for freshly harvested crops, with regard to both cooling rate and uniformity of temperature within the cooling medium. An extension of these methods is described, by which the temperature of the medium surrounding the product is calculated using the same set of data required to evaluate cooling rates. The theoretical basis for the method is presented and a laboratory experiment, using 5 broccoli stalks ranging in diameter from 0.02-0.04 m, is described. Results show that the accuracy of the technique is acceptable and applicable outside of laboratory conditions.
