บทคัดย่อ
Dimethyl sulphide (DMS) accumulates in the central cavity of satsuma fruits and is the source of the off-aroma which develops in satsumas stored at room temperature. In studies on the mechanism of DMS production, DMS was produced non-enzymatically from the precursor methionine-S-methylsulphonium. Synthesis was enhanced by the addition of ferrous ion and ascorbate to a cell-free extract. DMS production and ethylene synthesis were non-competitive in satsuma peel.
