Ethylene evolution and quality of blackberry fruit as influenced by harvest time and storage intervals.

 

Fruits of 2 thornless blackberry cultivars (Navaho and Chester) were harvested on 15 June and 1 and 16 July and stored at 3 deg C and 95% RH for 3 weeks. Fruit weight, fruit volume, total anthocyanins, TSS, total acidity, pH and ethylene production varied greatly with harvest date and during storage. Total anthocyanin content decreased during ripening and storage, with fruits harvested on the latest date having a lower total anthocyanin content than fruits harvested earlier in the season. Fruits harvested early in the season stored better than fruits harvested later in the season. Fruit quality deteriorated after 2 weeks' storage, particularly in fruits harvested on 16 July.
