บทคัดย่อ

The role of ethylene in fruit ripening involving coordination of the expression of genes responsible for a rise in respiration, autocatalytic ethylene production and changes in colour, texture, aroma and flavour, is reviewed. The role of ethylene in preclimacteric (system 1) and climacteric (system 2) fruits is discussed and gene expression of key enzymes involved in both systems is examined.
