The moisture content, the presence of aflatoxins and fungal microbiota were determined in 10 varieties of recently harvested maize. The highest moisture content obtained was 14% equalling 0.76 water activity. The total counts of fungi and yeasts were high, with significant infection by Fusarium (100%), followed by Penicillium (60%) and Aspergillus (35%). Among the 20 Aspergillus isolates, 35% belong to A. fumigatus, 30% to A. flavus, 30% to A. niger and 5% to A. ochraceus. The presence of aflatoxins was not found. The toxinogenic potential of 6 strains of A. flavus was estimated, and 3 strains were able to produce aflatoxin B1.
