บทคัดย่อ

Postharvest conservation of hawthorn.

 

The composition of Crataegus pubescens fruit pulp was analysed and its nutritive value in the human diet is discussed. Storage trials were conducted on fruits and pulp. The optimum storage conditions for fruits were scalding for 8 min at 90 deg C followed by freezing, which gave a storage life of 6 months. Scalding combined with refrigeration resulted in a storage life of 18-20 days. For the pulp, the addition of 0.02% sodium bisulfite and 0.02% sodium benzoate, followed by dehydration and refrigeration at 4 deg C, permitted storage for 2 years.
