In trials conducted in 1988-91, apples of the cultivars Golden Delicious, Idared and Gloster were harvested on 3 dates, stored for 100 or 200 days in a controlled atmosphere (CA, 15-16% O2, 5-6% CO2, 2 deg C, 95% RH), then moved to 5, 10 or 15 deg (60% RH) for 16 days to determine conditions for transport, handling and sale. For all cultivars, percentage weight loss was lowest in fruits stored at 5 deg after 100 or 200 days of CA storage and highest at 15 deg after 100 days of CA storage. Acid content decreased at all temperatures, but the decrease was greatest in fruits stored for 200 days then moved to 15 deg , and in fruits harvested at the latest date. Flesh softening took place irrespective of the temperature, with harvesting date being more important; early-harvested fruits maintained a firmer pulp texture than late-harvested fruits. Apples showing poor fruit colouring after storage developed a more yellow colour within 14 days when kept at 15 deg . When studying the influence of postharve
st shelf temperature on flavour development, flavour improved only in stock that was removed from CA storage after 100 days, i.e. mid-Jan. Apples removed from CA storage after 200 days (Apr.) showed a decline in flavour during subsequent storage at 5, 10 or 15 deg .
