Changes in CO2 production by M. emarginata fruits at the yellow-green and pink stages suggested a climacteric pattern of ripening. Fruits harvested at the pink stage with at least 6.5% soluble solids ripened normally. Vitamin C [ascorbic acid] content was 33% lower in pink fruits and 45% lower in dark red fruits than in green fruits. Pink fruits stored at room temperature (27 deg C, 70-75% RH) maintained their quality for 2-3 days when wrapped in PVC film. Storage at 8 deg and 85-90% RH with PVC wrapping increased shelf life to a week, without affecting vitamin C content.
