Preventing cargo biodeterioration (for example by freezing, chilling or drying perishable foods or by placing them in CA storage) and packaging and transportation needs for a range of products, including grain, meat, fruits, vegetables, fish and fish products are described. Stages in a simple and in a complex journey, from production to warehouse, are illustrated. Quality loss, the need for quality definitions and methods of settling disputes between the producer, the carrier and the receiver are discussed. The settlement of responsibility for quality loss should depend on the documented evidence of quality control at all stages between production, transportation and receipt of goods. Successful implementation of Total Quality Management systems throughout the transportation chain is required. It is suggested that preshipment surveys would contribute greatly to the attribution of responsibility should disputes arise.
