Peaches. Factors controlling postharvest quality.

 

Peaches picked when ripe have a 'life span' of only a few days. In order to preserve quality, appropriate measures are required right from the time of harvest, namely during packing, storage, transport and distribution. Suitable temperatures must be maintained throughout the distribution chain. This entails cooling fruits to <4 deg C just after harvest and maintaining temperatures of 4-8 deg during transport. Peaches must not be stored for too long if they are to achieve the full potential for taste and flavour. A definition of the relation between quality and storage time is proposed for each varietal category and typical distribution chain.
