Fruits and vegetables destined for the fresh market, or for processing, are required to meet certain quality grade standards. An overview of government and university postharvest handling research projects, in response to crop specific factors affecting quality, is presented. The requirements and availability of non-destructive sensing technologies, as well as research priorities, are outlined for several fruit and vegetable crops. Specific examples of quality characteristics being investigated (apples, cherries, potatoes and onions) are described to illustrate the range of projects under active consideration.
