Effect of postharvest storage conditions on the colour of green and white asparagus.

White and green asparagus spears were stored at 4-6 deg C and 90% RH, packed or not in low-density polyethylene bags (approx equal to 1 kg spears/bag), for up to 21 days. Hunter L*, a* and b* values, chroma and hue angle were determined at 3-day intervals. For white asparagus, modified atmosphere storage (in the bags) was more effective than cold storage alone for colour maintenance, but for green asparagus, both methods were adequate (although modified atmosphere storage was somewhat superior after 21 days).
