The appearance of disease symptoms caused by latent pathogenic fungi was related to the stage of fruit ripening. Chitinase and beta -1,3-glucanase activities increased gradually during ripening and pathogenesis, but decreased when fruits showed obvious disease symptoms. Activities of the 2 enzymes may be elicited by latent pathogens and inhibited by their metabolites. The inhibitors were not identified but were not precipitated by acetone. There was a positive relationship between the rate of infection by latent pathogens in fruit tissue and the chitin content.
