Effect of preharvest carbon dioxide enrichment on the postharvest quality of tomatoes.

 

The effect of preharvest application of elevated CO2 throughout the fruit growing period on organic acid and sugar contents, acid invertase activity [ beta -fructofuranosidase, EC 3.2.1.26] and colour quality in tomato cv. Momotaro fruits during storage at 20 deg C was determined. The CO2-enriched fruits had significantly lower concentrations of citric, malic and oxalic acids, but significantly higher reducing sugars contents and acid invertase activities at harvest and during storage. The concentrations of the organic acids decreased with storage. Acid invertase activity and reducing sugar contents increased in treated fruits during storage but were relatively constant in control fruits. Elevated CO2 resulted in a deeper red colour during storage.
