Cryo-fracture was used to observe mushrooms under a scanning electron microscope. The technique revealed anatomical details of sporophore tissues without the problem of exudate smearing and cell displacement. During postharvest senescence at 18.5 deg C, a proportion of cells underwent total collapse while the remaining cells remained fully turgid. The number of cells autolysing in this way increased during the storage period leaving a network of intact cells and greatly enlarged intercellular spaces. Mushroom senescence appeared to be localized and controlled at the level of individual cells.
