Tomatoes were grown in hydroponic culture with calcium at different concentrations in the nutrient solution. Fruits were harvested at the mature green stage and postharvest ripening and quality were monitored. Ripening, determined by colour change, fruit softening and ethylene production, was delayed by increasing nutrient solution Ca concentration. Ripening after the breaker stage was not affected by Ca treatment. Fruit pectin concentration increased with Ca concentration. Water-soluble pectin concentration was higher at the mature green stage than at the red stage. It is concluded that calcium treatment delayed the degradation of water-soluble pectin.
